The back side of this burp cloth is knit jersey, which I usually cut from an old t-shirt. I also use chenille or minky for the back, but if youre not quite ready to sew with knits, flannel or terry cloth would work just fine. I think youll find though that sewing with knit fabric is really easy for this project.
